Whether you're in the throes of post-partum or you're just feeling a little lacklustre, this delicious congee will leave you feeling warm, nourished and satiated.
This was the first meal I ate after I gave birth to my daughter and it's my favourite dish to make for my friends who need a little boost. This delicious congee recipe is full of warming herbs and spices, good fats and tastes like a big warm hug.
What you'll need:
1 cup of rice
6 cups of water
2 tbs Butter
1/2 cup Milk of choice
2-3 tbs Honey/Maple Syrup
1 tsp Nutmeg
1 tsp Cinnamon
1 tsp Ginger
Pepper to taste
2 tbs Chinese medicine herbs if you have some
1 Apple/Pear
Method:
Place the rice and water in a pot and bring to boil and then simmer.
Add all the herbs and spices.
When the largest amount of water dissolves, add a generous amount of butter.
When all the water has dissolved, turn off heat & add milk of choice.
Add maple syrup/honey just before serving.
Slice your fruit and place in a pot, cover with water and bring to boil then simmer for 10 minutes or until fruit is soft.
Serve congee with poached fruit on top and a dollop of yoghurt if you like.
